This recipe is a perfect side for breakfast with eggs or the turkey sausage on p. 6-7 of the New Recipe Upadate in the Members Site or blog recipe. You can also use purple sweet potato, yams or regular sweet potato for this recipe.
Ingredients
4oz. sweet potato, grated
1 tsp. pure organic coconut oil
Sea or iodized Salt and Pepper to taste
Directions
In a non-stick cooking pan over medium heat, add the grated sweet potato. Cook for 2-3 minutes per side. Add salt and pepper to taste. Serve hot.
Makes 1 Serving: Serving size= 4oz sweet potato shredded
